I used to love waking up early as a kid to the sun peeking into my bedroom window; Natures alarm clock.

As if a bird has snatched the sky out of its sleepy depths and rose with it under ruffled wing.

Because I Can Cookies - Recipe

Girls and Boys,
everyone will tell you there are rules when it comes to baking.
They will say, "follow the measurements precisely"
and "Don't eyeball it"
Well to them I say,
"NONSENSE!"

I like to experiment.
Dan says I would make a good Iron Chef because I generally don't need a recipe, and even if I have one, I rarely follow it to a "T".

It's just not how I roll.

So the other night at about 8pm I got the bug.
The baking bug.
The urge to create sweet warm soft yet crispy goodness.

So I pulled out my flour, and brown sugar (actually brown sugar blend splenda) and the vanilla extract.
I had every intention to make Skor Bar cookies (if you aren't familiar with Skor it is a delicious crunchy toffee) But as I was rummaging around in my turn style pantry I came across some quick cooking oats.
I thought "Excellent! They are now oatmeal cookies!"

And then I found a bag of white chocolate chips.
"Delicious!" I thought.
And finally, I opened up my freezer and found some flaked coconut.
"Should I?" "I should!"

For a brief nano second I thought "Nah, I can't put all this in a cookie can I? That is crazy"
But oh yes, I can!

So, a few cups of this, a half a cup of that, a dash of this and a tablespoon of that later, and I give you :

The "Because I can" Cookie.

They are GOOD.
REAL GOOD.
Good to the point that my non sweets loving sweetie himself ate 4 when he walked in the house last night.

So for all you recipe lovers out there, here it is. But just note, switch whatever you like for whatever you like.
Dark chocolate for white.
Nuts for coconut ( which by the way, is NOT a dominant flavour - it just gives these cookies a little Je Ne Sais Quoi )

Do whatever you want, because you can.
Just don't forget to tell me about them!

Recipe:

2 Eggs
1 1/2 Cups of packed brown sugar ( I used brown sugar blend spenda)
3/4 butter
2 teaspoons Vanilla extract
1 3/4 cups flour
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
2 cups quick cooking oats
1 teaspoon baking soda
1/2 cup flaked coconut
1 package Skor toffee bits
1/2 package of White Chocolate chips


Directions :
Heat oven to 375F. Line cookie sheets with parchment paper for no sticking and super easy clean up.

Beat butter, sugar, vanilla, and eggs till smooth and combined.
All flour, baking soda, cinnamon, and salt, and beat again till smooth.
Fold in oats, toffee bits, chocolate chips, coconut ( or whatever you like - raisins, nuts, M&Ms etc)
Spoon small mounds on the cookie sheet about 2 inches apart.
Bake for approx 12 minutes or until the edges are golden brown.
Cool for a minute, then remove to rack to cool.

This made me just shy of 4 dozen cookies.

Up For Grabs!

Every now and then I remember to stop and take a snap of the piece I am working on to show you all a progress pic.

The other day I decided to make another one of my Many Moons ring, since the first was quite popular. This puppy is going to be made with a gorgeous Chrysocolla that I had custom cut for me - it is divine if I do say so!






So, I thought I was post this before I soldered a ring band on, to put the chance out there for someone to claim it as their own in their ring size!
She measures approx 1 1/2 inches wide, and 1 1/4 inches tall.

Let me know if this ring belongs to you!
If I don't hear anything by say Weds May 25th, I will go ahead and finish her up in a size I believe will sell :-)

The Magic of MOM

I've been having a rough few weeks.
There has been a lot of heavy thoughts flowing through this mind lately.
Thoughts of confusion, and worry, and unknowingness.
And some BIG change in my future has had me uneasy.

I have kept it to myself, because I am pretty private like that, but there will always be one person in my life that sees through any veil I wear - my mom.
She heard it in my voice, she could tell in my mannerisms
that something just wasn't right.

And then the other day she showed up on my door step with flowers, just to put a smile on my face.
It surely did.

{Carnations were Grandma's favorites, because she loved how they lasted so long. So delicate, yet so underrated!} 


{I find the ferns just as pretty as their flower sisters. You wont hear me refer to them as "filler"!}


{Orange has quickly become one of my favorite shades. I never would have thought I would love it so much. Viva L'Orange!}

It is amazing what a token of thought and love can do for someone. Don't ever forget how much power you have in a hug, a compliment, a flower or two.
